In 2010 we send a sample of our Longhorn Ground beef to an independent lab for analysis. The results confirmed what we already knew. Our Animals are LEAN! Many ask why we don't have cuts of beef, only ground. Leanness is the answer. Yes our cattle can get "fat" but it's not intramuscular fat, it's subcutaneous, which means their fat sits on top of their muscle, underneath their hide. So we don't get a marble of fat that most want in their steaks. If you want a steak - go to your local butcher and pick out a nice marbled one. But if you want a lean ground beef option, we've got it!
